6 ha estate in the heart of the Corbières, the vines are located on a clay-limestone plateau at an altitude of 250 m allowing late maturity thanks to the cool nights.
The vines are surrounded by scrubland and under organic cultivation with passages through biodynamic preparation soils.
The yields are low (20 hls / ha).
The harvest is late (end of September and end in mid October). I followed the biodynamic calendar by avoiding unfavorable days (lunar knots) and favoring fruit and flower days which allows the harvest to be spread over three weeks.
The grapes are picked by hand and sorted in the vineyard, they are transported to the cellar in small boxes. Total destemming of the harvest and vinification in stainless steel vats.
